Saturday night....and a new recipe

The other day, while perusing a copy of Real Simple magazine, I stumbled upon a recipe that sounded FABULOUS!  Chicken and Quinoa Burritos.  Now before you go and have a hissy fit and think, What is quinoa? And why is Angie Good eating it?  Know this...quinoa is just a rice substitute.  I figured I would be brave...this being Independence weekend and we are the home of the free and the BRAVE.  :)

Here's the recipe if you would like to try it...

Chicken and Quinoa Burritos
Total time:  25 minutes
Serves 4

Ingredients:
4 burrito-sized tortillas
1 cup cooked, shredded chicken
1 cup black beans (I'm going to drain mine...)
1 cup quinoa (or brown rice)
1 cup grated Monterey Jack cheese
1 cup cilantro, chopped
1/2 cup Greek yogurt
1 sliced avocado

1.  Warm tortillas.
2.  Divide all ingredients equally on to tortillas.
3.  Serve with corn salsa.
