Ingredients:
2 baked chicken breasts, cubed
1 avocado, chopped
1 can black beans, drained
1 cup quinoa, cooked
1 cup shredded cheese
1 cup salsa
1/2 cup plain Greek-style yogurt (since it tastes like sour cream...I'm going to venture to say that you can substitute this with sour cream)
Romaine lettuce
Directions:
1. Chopped romaine lettuce and place on plate.
2. Top with a smackeral of all ingredients listed.
3. Enjoy!
This recipe can also be altered to make burritos. I haven't found gluten-free burritos so I've not been adventuresome. The salad version is my favorite. :)
