Why is it that I only think about purchasing a watermelon after I initially consume one? Watermelon is never on my grocery list. I have a theory...watermelons are HUGE...and I hate it when I buy produce and it goes bad and must be thrown-away. It's so wasteful and it really makes me sad. I think I avoid purchasing watermelon unless I know for a fact that it can be consumed. Tonight was that night.
While we were at the gym doing the weights and pretty much tired of being at the gym, I mentioned the watermelon which was consumed yesterday at a certain 2-year olds birthday extravaganza. One mention of watermelon and Rhonda was up for the challenge. With great vigor, we finished our weight work-out and headed straight to the grocery store where we purchased strawberries, pineapple, 2 avocados (for some "good fat") and one large watermelon.
We consumed 2/3 of the watermelon and one avocado in less time than it takes most people to spell a-v-o-c-a-d-o. The watermelon was FABULOUS!!! We used our mothers' thump the rind test...worked like a charm! The pink inside was juicy and absolutely perfect. And the avocado was delectable.
What a fabulous supper for two fabulous girls!!!
Oh - and we decided that we are going to make this a summer Monday ritual -- supper at one another's house. What a great way to start the week!!!
