Pumpkin Spice Coffee Creamer

Dairy Free Pumpkin Spice Creamer

 Ingredients
2 cans of organic coconut milk*
5 tablespoons organic pumpkin puree 
1 teaspoon pumpkin spice**
1/2 teaspoon cinnamon
6 tablespoons maple syrup or raw honey
1 teaspoon vanilla extract
extra cinnamon for dusting
 
Directions:
1. Combine all ingredients.
2. Add to your coffee.
3. Enjoy!
 
* - I had to tweek this recipe as I did not have any coconut milk.  I used almond milk instead and it tastes FABULOUS!!!
 
** - You can make your own pumpkin pie spice.  This recipe is from The Kitchen Companion by Polly Clingerman (a beloved Christmas present from my college roomie Mandy). 
 
Pumpkin Pie Spice
1/8 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground allspice
1/8 teaspoon ground nutmeg
 
Combine all ingredients.
